Are you suggesting that all information is equal in value? Are you suggesting that technicians have the slightest inkling of what ticks in an artist's head and their motivations? Just because it say "art" in front of the rest of their name does not mean that they have any more understanding of the problems of the painter than art salesmen or art-ificial flower arrangers. They are technicians, pure and simple. They are not the skilled master craftsmen who can make a flawless copy of a Rembrandt. If you know anything about conservators, you'll know that they very seldom ever use the original materials to repair a piece. Frescoes are restored with watercolor, not buon fresco. The very seldom retouch pieces using the same oil mediums, etc. but rather they apply the same stuff from on painting to another, regardless of style or age. Their patches of a glazed section will seldom ever use a glaze, just a near match with the out-of-the-box colors. Methinks that your lack of firsthand experience with restorers has led you to believe the movie version of what they do.
Is that unkind or is it the truth? It's both, because often the truth does not support unsupportable romantic notions of what the art world is all about.
HINT: Art is the root word for ARTificial.
