Jack, polyvinyl acetate glue is a wonderful adhesive for attaching things together. It does not hve any Bloom Strength, or gel strength. Rabbitskin glue is a good adhesive, but it has marvelous Bloom (about 510 - 550 grams). Because rabbitskin glue is used as a sizing, not as an adhesive to glue thing together, the Bloom is the most important aspect. That's because a stronger gel will bridge gaps in porous materials such as fabric. What that means to you as an artist is that the linen will be completely protected from later incursions by the oil in the paint, thus preventing it from rotting.
For gluing wood joints together, PVA is pretty good (hide glues have their
advantages too), but it cannot begin to compete with rabbitskin glue (or any
other gelling glue) for sizing linen.
