If you're using canvas pliers, you don't need to stretch it too tight. Your procedure sounds correct; as long as you follow it the canvas will stretch mostly on its own. Just don't pull too tight! I'm a little person and I don't even put any gusto into it. I just grab the canvas with the pliers, pull it over and staple it. Eventually the whole procedure will do the stretching for you.
When you are finished, the canvas should sound like a drum when you thump in with a finger in the middle. If it is a little loose or it can go a little tighter, saturate the entire stretched canvas in hot water and let dry. It will shrink and get tighter.
